In a onexone RP context doubling means you both play two characters. In the quote you posted this player is assuming that if you each play one character then the person playing opposite him/her will play a male character to her female.

I kinda guessed but dear god the roleplaying community has so many terms.

It's shorthand for "too long; didn't read." It is what somebody does, and often what somebody SAYS, when they won't read a post because they thought it was too long, but comment anyway.
